Enjoy the minty fresh flavors of this decadent, rich, peppermint mocha any time of year!
When the days start getting shorter, the hubby, Frenchman and I love to enjoy hot beverages in the evening. The kind that make you want to curl up with a good book, soft blanket and just forget that the world exists for a while. You too?
What is it about a hot cup of our favorite beverage that makes everything seem okay again?
Maybe it’s the soothing heat as it glides down your throat, or the warming aroma that swirls around your nose. Whatever it is, the feeling is just this side of perfection.
Now, the hubby and I used to be big fans of big chain coffee shops. The kind that charge $1 a syllable coffee shops. Budget breaking, waistline destroying coffee drinks. The spending had to stop, the calories had to stop and the extra sugar had to stop.
Off to the kitchen to create a peppermint mocha that would taste just as good as the coffee shops, but be much easier on the budget.
The problems I had to contend with:
- it had to pass the Frenchman’s approval
- the peppermint mocha HAS to be minty, and mocha-y
- budget friendly
- easy enough for the boy to make on his own
Simple enough, right? I think that I have a creation that is amazingly minty fresh, with the soothing aroma of coffee, chocolate and peppermint combined. Top it off with some real whipped cream and grab your favorite book. This one is a keeper!
- 8 ounces fresh brewed coffee (1 cup)
- 1/4 cup cocoa powder
- 2 Tablespoons erythritol
- 1/4 teaspoon peppermint extract
- Whipped cream to top
- Blend hot coffee, cocoa powder, sweetener and extract together in a blender until smooth.
- Pour into coffee mug.
- Top with whipped cream.
Of course, you could use coffee substitutes if you want to avoid caffeine. Some options:
